Our Heartwarming Soup Event!
Wednesday night was the BEST! I got to do all of my favorite things: drink wine, cook, eat, and visit!!
At Choices, we are intent on connecting with our community in meaningful ways. I felt so fortunate to host 17 people for a soup cooking demonstration followed by eating our delicious soup, sipping wine, and sharing lively conversation. Thank you to all who came. Great conversations were had and new friendships began! Hopefully, everyone got to know Trace and I a little better and why we feel Choices is such a special place.
Here is the recipe I prepared: Green Minestrone adapted from Rachel Ray's 30 Minute Meals. It was simple to make this vegan. Instead of pancetta or bacon, I used vegetarian bacon bits, and sauteed them in a little olive oil. Instead of chicken broth, I used a combination of vegetable broth and "no chicken" vegetable broth. Any pasta you have on hand can work, but it's best to have the bitesize type so it fits on your spoon. For our event I chose orecchiette (tiny discs that look like flying saucers.) One of our guests mentioned a cool recipe for Thanksgiving that was a puff pastry cornucopia filled with roasted vegetables. What a cute idea! I found the recipe and you can click here to access it!
