You’ve gotta try this Cauliflower Walnut Taco Filling!
Even if you’re not vegan, you’ll love this Cauliflower Walnut taco filling! The texture is similar to ground meat and the seasoning can either bring the heat (which I opted for) or not. You have the blog Pinch of Yum to thank for this delicious recipe.
All you need is a few ingredients and your favorite taco toppings. For us that means—chopped lettuce, red onions, cherry tomatoes, avocado, and our favorite salsa.
I flavor up a can of black beans by sautéing a handful of onions and green pepper with a clove of garlic in olive oil. Toss in about a half teaspoon of oregano and a teaspoon of cumin. The secret ingredient? A splash of vinegar. I know it sounds weird, but it adds just a slight tang. Depending on how you like your beans, you could add chili powder (I like ancho chili powder), coriander, maybe even some cayenne. I let it simmer while the taco filling is roasting. You can find a wide variety of spices in our bulk area, at bargain prices!
We can never get enough of tacos at our house. Always a hit!
