A Quick and Healthy No-Stress Dinner!

I love cooking from scratch, but when I need to get something on the table fast, this is my go-to meal!  By the time the rice is cooked (about 30 minutes) I have the Madras sauce ready to go and some frozen veggies steamed!  I usually put the rice on, then get busy with personalizing the sauce.  Chop the chicken into pieces and brown.  While the chicken browns, it's time to roughly chop some onion and bok choy--lucky me--Choices is still getting local produce and this bok choy was from Rebel Belly Farm in Rockford! The best part is the finishing touch:  chopped fresh pineapple!  AMAZING!  You can easily adapt the ingredients depending on what you have on hand.  Be creative!  Enjoy a no-stress healthy dinner!
