Taco Spring Rolls - A Fusion Food

Check out this amazing new spin on tacos. Taco Spring Rolls: tacos wrapped in rice wrappers. You can eat these cold, pan-fry them or air fry them.
This recipe was adapted from a Forks Over Knives recipe featured in their Fall 2022 magazine.
Here’s what you need to make 12 spring rolls. Prep and cooking time: 40 minutes
1 teaspoon olive oil
4 oz. fresh cremini mushrooms, sliced
1/2 small onion, roughly chopped
1 packet Siete chorizo seasoning mix
1 15-oz. can chickpeas, rinsed and drained
1/4 c. walnuts, toasted
3 tablespoons fresh squeezed lime juice
12 rice paper wraps
1 15-oz. can pinto beans, rinsed and drained - mashed
1/2 cup green onions
1 fresh jalapeno pepper, thinly sliced
cilantro leaves
fresh salsa
First: Prepare the taco filling - mushroom chorizo.
Heat olive oil in a small skillet. Saute the mushrooms until lightly browned and water has evaporated.
In a food processor, add the mushroom mixture, walnuts, chickpeas, spice mix and 1 tablespoon of the lime juice. Pulse until chopped.
Next - assemble the taco spring rolls.
Place one of the rice papers in a shallow bowl of water. Let it soak for 15-20 seconds. Lift it out and let the water drip off. Lay it flat on a cutting board (or a large plate.)
Across the middle, place about a tablespoon of mashed pinto beans and a tablespoon of mushroom chorizo mixture. Just above it, place a few leaves of cilantro and jalapeno slices, if desired.
Fold the bottom part of the rice paper up over the mixtures. Then, fold the each side toward the center, and roll from the bottom up to seal the taco spring roll. Continue until all of the mixture is used (about 12 rolls.)
Air fry directions: Preheat the air fryer to 390 degrees. Brush the rolls with remaining lime juice. Place the spring rolls evenly in the air fryer basket. Cook for about 3 minutes, then turn and cook for about 3 or 4 more minutes - until they are browned.
Pan frying directions - if you do not have an air fryer, you can cook these on your stovetop. Place 3-4 tablespoons of neutral oil in the bottom of a large skillet. Heat until droplets of water sizzle when sprinkled on top. Add the spring rolls, and cook 3-4 minutes per side and thoroughly crisp and brown.
To Air Fry - preheat your air fryer to 390. Brush the spring rolls with the lime juice that is left. Place the spring rolls in the basket allowing space between them. Work in batches. Air fry 3 minutes. Turn over. Continue air frying for another 3 -4 minutes, until brown and crunchy.
Serve with your favorite condiments, such as Choices fresh salsa. guacamole, sour cream or you could even dip in sweet chili sauce.
You could also enjoy these cold, like a traditional spring roll.
